Hand-harvested in April 2006 in small baskets of 12-15 kilos. The 2005-2006 season was quite normal but late summer temperatures were cooler and resulted in a growing season that was drier and colder than the past seven years. There was no rainfall during harvest; but due to the cooler temperatures throughout, the primary challenge of the 2006 vintage was the extended hang-time in order for each variety to reach proper phenolic maturity. This extension of the season conserved the fruit and allowed for good concentration with soft, well-rounded tannins. Cold nights at the beginning of April preserved the natural fruit acidity and lively expression. On the other hand, we were lucky that conditions remained stable and a dry autumn allowed us to wait patiently to harvest ripe fruits at the level of maturity we were looking for.

Like the town of its name, Paso Creek 2005 Cabernet Sauvignon is as unpretentious as it is robust and boisterous. This is a brawny and ripe, full-bodied, juicy, and intense wine. Not intended for passive palates. And yet there's a sense of refinement — of structural integrity, if you will. Serving up all the bold, in-your-face flavors, and subtle nuances of a serious Cab, sans the serious attitude.
According to Vineyard Manager Paul Kenney, 2005 was an average growing season. That is if your idea of "average" is daily temperatures that can swing from daytime highs in the hundreds to the forties at night. That and the bone-dry soils make growing grapes here a true labor of love. It's rugged duty for viticulturists. But for Cabernet Sauvignon, well, let's just call it character building.

Vintage Napa Valley's 2006 growing season was influenced initially by a warm February that tricked the vines into early budbreak and then, an unseasonably cold and very wet April caused the vines to stop growing. In May, the temperatures returned to normal and the vines resumed growth. Harvest started at the beginning of September and came to a close in early October. The growing season held many challenges, with extreme swings between hot and dry to cold and wet; the end result was a low yield and grapes with thick skins and great concentration. This wine shows aromas of evolved dark fruit and very supple, mature tannins on the finish.

Napa Valley’s 2006 grape growing season was nearly textbook, marked by consistently outstanding, high-quality, abundant crops. Bloom and set-on-the-vine occurred a few weeks later than usual because of cool and wet weather that lasted well into Spring, but by June the vines were back on track. In mid-July, a record-setting heat wave lasted about ten days, but due to the earlier delays, the damage to the grapes was nearly non-existent. In fact, most growers agree that the heat helped where they should be in a “typical” growing. Some growers feared that if the heat-wave continued into August the harvest schedule would be extremely tight, but the weather returned to normal and the grapes were able to ripen in ideal conditions until harvest began in early September.
To naturally soften tannins and enhance varietal complexity, we gave the wine 28 days of skin contact. We then pressed the wine and transferred it to French oak barrels to undergo a long malolacticfermentation for roundness and depth. Blending in the Cabernet Sauvignon added interesting nuances to the lush berry flavor profile of the Merlot.
